These homemade sausage rolls are perfect for picnics, with a fabulously indulgent combination of our Hot Date Chutney and a little Stilton – and by taking a little shortcut with shop-bought pastry, they’re a lot easier to make than you might think, too. Fancy switching it up? These would also work really well with our Pear, Apple and Cider Chutney.



Date & Stilton Sausage Rolls


  • 500 g ready-made puff pastry
  • 400 g sausage meat (or 6 sausages, skins removed)
  • 150 g Stilton
  • 2 tbsp In A Pickle Hot Date
  • 1 egg, beaten
  • Butter for greasing baking sheets
  • Flour for dusting
  • Poppy seeds for sprinkling (optional)


  • Preheat the oven to 200˚C (180˚C fan). Roll out the pastry on a clean, floured surface to create a rectangle roughly 40cm by 26cm, and then cut in half length-ways so you have two long pieces of pastry.
  • Mix together the sausage meat, cheese and Hot Date Chutney, then shape into two long sausages that you can place down the centre of each long piece of pastry.
  • Brush one long edge of each piece of pastry with a little beaten egg, and then fold the pastry over the sausage meat and press the edges together to seal. Cut each long sausage roll into 12 little sausage rolls.
  • Brush each roll with beaten egg and sprinkle with poppy seeds, then bake on a lightly greased baking sheet for 15-20 minutes until golden brown.
